Peach Cobbler

Peaches aren't quite ripe here, but after your post this week I couldn't wait to try something peachy, so I went with the good old faithful cobbler. I looked at a few recipes and then sort of made this one up. And it's delicious! 

Mix and let sit for 7 minutes

2 pounds of ripe peaches, peeled and sliced

1/2 or 3/4 C sugar ( I went with a little more because these were not quite ripe)

1 Tablespoon cornstarch

Cream together

1/2 C sugar

1/2 C butter

1 teaspoon vanilla

Add

1 egg

3/4 C four ( I used white rice flour to make the batter a little lighter)

1/4 teaspoon baking powder

Top with 1/4 cup sliced almonds

Bake 

at 375 F for 50-55 minutes

Serve warm with vanilla ice cream
