Strawberry Sponge Cake and a Happy Birthday

A very  happy birthday to my Mum! I love her for so many reasons. Perhaps one of my favorites is her staunch patriotism to the motherland, Australia. Though she has lived in the states for close to 28 years, she maintains her Australian citizenship and shows her green card every time we travel. God save the Queen, vegemite, and g'day to you. 

For her special day I wanted to make something from the homeland, so I made a sponge cake. 

Cream together until smooth: 

1/2 C butter

1 C Sugar


4 eggs, one at a time 

4 tablespoons of milk

1 teaspoon of vanilla


2 C flour

2 teaspoons of baking powder 

a pinch of salt

Pour into:

Round baking pan that has been greased, floured, and lined with wax paper


at 350 F  for 20 minutes

Remove from pan and allow to cool for 1 hour. Cut in half to fill center with cream. Serve with strawberries and - if it's a special birthday - champagne!
